Head Chef from The Royal Garden's Le Soleil demonstrates preparing "Lotus seedling shrimp salad"
"iLearning" was delighted to invite Szeto Ka Wa, Head Chef of The Royal Garden's Le Soleil Vietnamese restaurant, to demonstrate how to prepare fresh and appetizing "Lotus seedling shrimp salad".
Ingredients:
Lotus seedlings 250g / 1 carrot / 3-4 white shrimps / dried onions, chopped shallots, chopped peanuts, mint leaves
Vietnamese dressing ingredients:
Vietnamese 25° fish sauce 50ml / sugar 250g / water 200ml / lime juice 50ml / red pepper 50g / garlic 50g
Preparation:
1. Mix the Vietnamese dressing ingredients and set aside.
2. Cut the lotus seedlings and the carrot into strips (about 4 cm) then marinate in the Vietnamese dressing overnight.
3. Fry the white shrimps, then peel and butterfly-cut them. Set aside.
4. Remove the lotus root seedlings and the carrots from the marinade, then place the shrimps, dried onions, chopped shallots, chopped peanuts and a few mint leaves on top, and add a little lime juice, sugar and olive oil. The dish is now ready to serve.
